Vegan Fajitas

Vegan Fajitas
  • 2 large onions, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 orange bell pepper, cut into strips
  • 2 zucchinis, sliced
  • 1 packet fajita mix (your favorite brand)
  • 1 package whole grain tortillas
  • 1/4 cup and 4 tablespoons water
  1. Preheat pan.  
  2. Sauté onions in 4 tablespoons water until translucent.  
  3. Add all the vegetables and sauté until tender.  
  4. In a separate bowl, mix 1 packet of fajita mix with 1 cup of water.  Mix well then add to the vegetable.  
  5. Cover, lower heat, and simmer until sauce thickens.
  6. Serve hot on a whole wheat tortilla.  Enjoy!!
