Vegan Fajitas
- 2 large onions, cut into strips
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 yellow pepper, cut into strips
- 1 orange bell pepper, cut into strips
- 2 zucchinis, sliced
- 1 packet fajita mix (your favorite brand)
- 1 package whole grain tortillas
- 1/4 cup and 4 tablespoons water
- Preheat pan.
- Sauté onions in 4 tablespoons water until translucent.
- Add all the vegetables and sauté until tender.
- In a separate bowl, mix 1 packet of fajita mix with 1 cup of water. Mix well then add to the vegetable.
- Cover, lower heat, and simmer until sauce thickens.
- Serve hot on a whole wheat tortilla. Enjoy!!
