Curry Lentil
- 1 cup dry lentils
- ½ onion, chopped
- 2 cloves of garlic, chopped
- 1 potato, peeled and chopped
- 1 carrot, chopped
- 1 tomato, chopped
- 1 cup tomato basil sauce
- ½ tsp curry
- ½ tsp turmeric
- 1 tsp sea salt
- 3 cups of water
- Wash and put lentils in medium pot with 3 cups of water and bring to a boil until soft and all the water is dry. Set aside (no need to drain).
- In separate pot, sauté the onion and the garlic.
- Add and stir in the carrots, potatoes, tomatoes and add a few drops of water to keep from sticking/burning.
- Add the curry, salt and stir.
- Cover for a minute or so until the potatoes and carrots start to soften.
- Stir and add the tomato basil sauce.
- Add the pre-boiled lentils and mix/stir well.
- Add 3 cups of water and cover. Continue to slowly cook/simmer for 5-7 minutes. Stir again.
- It’s ready to serve. Enjoy!!
