Curry Lentil

Curry Lentil
  • 1 cup dry lentils
  • ½ onion, chopped
  • 2 cloves of garlic, chopped
  • 1 potato, peeled and chopped
  • 1 carrot, chopped
  • 1 tomato, chopped
  • 1 cup tomato basil sauce
  • ½ tsp curry
  • ½ tsp turmeric
  • 1 tsp sea salt
  • 3 cups of water
  1. Wash and put lentils in medium pot with 3 cups of water and bring to a boil until soft and all the water is dry. Set aside (no need to drain).
  2. In separate pot, sauté the onion and the garlic.
  3. Add and stir in the carrots, potatoes, tomatoes and add a few drops of water to keep from sticking/burning.
  4. Add the curry, salt and stir.
  5. Cover for a minute or so until the potatoes and carrots start to soften.
  6. Stir and add the tomato basil sauce.
  7. Add the pre-boiled lentils and mix/stir well.
  8. Add 3 cups of water and cover. Continue to slowly cook/simmer for 5-7 minutes. Stir again.
  9. It’s ready to serve. Enjoy!!
