Split Pea Curry

Split Pea Curry
  • 2 cups split peas (yellow or green split peas)
  • ½ onion, chopped
  • 1 tomato, diced
  • 1 cup tomato basil sauce
  • ½ tsp curry
  • ½ tsp turmeric
  • 1 tsp sea salt
  • 4 cups of water
  1. Wash the split peas. Cover with water. Water level slightly higher than the level of peas. Boil until soft and all the water is dry. Set aside. No need to drain.
  2. In separate pot, sauté the onion and the garlic then stir and add the tomato basil sauce.
  3. Add the curry, sea salt and stir.
  4. Add the pre boiled split peas.
  5. Add 4 cups of water and cover.
  6. Simmer for 3-5 minutes. Stir again. It’s ready to serve. (Goes well over a bed of rice). Enjoy!!
