Savory Quinoa-Kale Salad

Savory Quinoa-Kale Salad
  • quinoa
  • kale
  • water
  • a bottle of sundried tomatoes in olive oil
  • salt
  • optional ingredients: lemon (for seasoning), chicken flavored vegetable broth, red onion, yellow or orange bell pepper, cucumber, nuts (thin sliced almonds).
  1. Take about a cup of quinoa and boil it in 2 cups of water (you can also substitute a cup of water for a cup of chicken flavored vegetable broth). Boil until water has evaporated.
  2. Wash and chop kale into small cube sized bits.
  3. Mix quinoa, kale and sundried tomatoes including a small amount of the olive oil that the sundried tomatoes were soaked in.
  4. You can season it to your taste with salt and lemon.
  5. You can also add a little flair with red onions, orange bell pepper, cucumber or nuts. Enjoy!!
