Savory Quinoa-Kale Salad
- quinoa
- kale
- water
- a bottle of sundried tomatoes in olive oil
- salt
- optional ingredients: lemon (for seasoning), chicken flavored vegetable broth, red onion, yellow or orange bell pepper, cucumber, nuts (thin sliced almonds).
- Take about a cup of quinoa and boil it in 2 cups of water (you can also substitute a cup of water for a cup of chicken flavored vegetable broth). Boil until water has evaporated.
- Wash and chop kale into small cube sized bits.
- Mix quinoa, kale and sundried tomatoes including a small amount of the olive oil that the sundried tomatoes were soaked in.
- You can season it to your taste with salt and lemon.
- You can also add a little flair with red onions, orange bell pepper, cucumber or nuts. Enjoy!!
